Galentine’s Vodka Cocktail Recipe | Low Sugar

Galentine’s Day is a holiday I didn’t start celebrating until I moved to Texas and met some amazing fellow mamas that loved dressing up, cheering to a morning brunch without kids and taking photos. This Low Sugar Strawberry-Lime Cocktail is inspired by a hack I saw Jessica from How Sweet Eats use on her blog which is to use any jam in your fridge to shake up a drink and have a flavored margarita or cocktail in a pinch. Jam is something I know everyone has in their fridge and this will be a super exciting way to use it. I use the most delicious reduced sugar jam to hive the cocktail the strawberry flavor with a Fancy Sprinkles rim and I add their shimmery pink edible Prism Powder for a pretty, refreshing and shimmery cocktail.

Instead of making a margarita, I made a spiked lemonade and I really wanted to use my Galentine’s inspired drink stirrers and let me tell you the result was phenomenal! It tasted like a strawberry lemonade cupcake, a total party in your mouth whether you have it with the alcohol or as a mocktail.

Low Sugar Strawberry-Lime Lemonade

A pink cocktail drink low in sugar but full of a creamy, tangy flavor!

Ingredients

  • 6 limes juice of 6 limes
  • 3 big strawberries halved as cut as heart shapes
  • 3 tbsp Reduced Sugar Strawberry Preserves I use Smuckers brand
  • 4 oz vodka
  • 1 tspn Fancy Sprinkles Prism Powder in Tourmaline Pink
  • 1 tbsp Fancy Sprinkles in Daddy's Girl for rimming glass
  • 1 tbsp honey or agave syrup for rimming glass
  • 1 cup crushed ice
  • 1 can LaCroix LimonCello I find this flavor at Target

Instructions

  1. Rim your glass with honey.

  2. Place sprinkles in a bowl.

  3. Press your rimmed glass into the sprinkles.

  4. Half the strawberries and cut the top middle part of the strawberry out to make a heart shape. Cut a sliver of that to get a thin heart shape and carefully "paste" into the glass wall. Press it down with a butter knife or spoon so it sticks.

  5. Using the the mason jar as a cocktail shaker combine ice, Prism Powder, juice of 6 limes, strawberry jam and shake well. Taste it with a spoon, it shoudl be tangy & sweet & it’ll taste even better when we top it with the sparkling water.

  6. Pour the drink 2/3 of the way into the tumblers on the opposite side where the strawberries are "pasted."

  7. Top with LaCroix and enjoy!
